SKEWER NIGHT

Is there anything better than eating meat off a stick? NO.

But what if one of your guests is a vegetarian who eats seafood? Is eating fishy creations as good? I guess so!

We had some pals over and bought some skewers and I got wild in the kitchen. Starting with the safe, never fail option of chorizo and prawns in a cajun marinade and some vegie and haloumi ones for good measure. I fired up the coals and let them roast…





I’d been soaking some baby octupus in red wine and garlic so we put those on skewers too. I didn’t take any photos of them but anyone who needs to an octupus with a stick shoved through can just do it themselves.

Anyway it was time to make something really special:


I cut some cubes of mango and threaded them onto skewers with calamari, then let the skewers marinate in soy sauce, coriander and chillies. I put them over the coals and let them cook for about 20 minutes. Anyone who hasn’t had mango on the bbq before should just go out and do it now. The outside of the mango blackens and caramelises and the middle stays really sweet. It tasted insane with the soft, well cooked calamari.
